Healthy summer lollies


Creamy Blueberry & Vanilla ice pops

Makes 6


Blueberry layer


4 small ripe avocadoes

280g plain yoghurt

1 Tbsp lemon juice

1 Tbsp maple syrup

75g fresh or frozen blueberries


Vanilla layer

560g plain/vanilla yoghurt

1 Tbsp maple syrup

1 tsp natural vanilla extract


Place the ingredients for the blueberry layer in a high seed blender and whiz until smooth

Pour the mixture into six ice blocks (lollipop) moulds and freeze for 2-3 hours, until firm


Clean out the blender, add all the vanilla layer ingredients and whiz until smooth. Pour the mixture into the moulds over the blueberry layer

Freeze for 3-4 hours or until set

The pops will keep in the freezer for 2-4 weeks

When ready to serve, run the moulds under hot water until the lollies slide out easily

Enjoy immediately


There are so many variations you can try. Add fresh fruit, use fruit juice, use blended fresh fruit. Make the colourful exciting and super fresh.
