Wholesome Chicken Meatballs


You will need:

  • 500g chicken mince

  • 1 green apple, cored, peeled & grated

  • 180g zucchini, grated

  • 2 cloves garlic, crushed

  • 100g quinoa, cooked

  • 150g feta, crumbled

  • 4 tablespoons of green herbs, finely chopped (parsley, coriander, mint)

  • 1 tablespoon of lemon rind, finely grated

  • Sea salt and cracked black pepper, to taste

  • Olive oil, for brushing

To prepare:

  • Preheat the oven to 200C.

  • Place all ingredients (except olive oil) in a bowl and mix lightly to combine well.

  • Roll tablespoons of the chicken mixture into balls, and place on a lined baking tray.

  • Lightly brush each ball with oil and bake in the oven for 10 minutes.

  • Remove from the oven and roll the balls to cook on the underside.

  • Return to the oven for 10 minutes or until golden and cooked through.

  • Serve with a side of salad and a herby mayonnaise.


Note: if you’re unsure about seasoning, cook a small sample to taste and then adjust salt & pepper as needed
