
- 1 green apple, cored, peeled & grated
- 4 tablespoons of green herbs, finely chopped (parsley, coriander, mint)
- 1 tablespoon of lemon rind, finely grated
- Sea salt and cracked black pepper, to taste
- Preheat the oven to 200C.
- Place all ingredients (except olive oil) in a bowl and mix lightly to combine well.
- Roll tablespoons of the chicken mixture into balls, and place on a lined baking tray.
- Lightly brush each ball with oil and bake in the oven for 10 minutes.
- Remove from the oven and roll the balls to cook on the underside.
- Return to the oven for 10 minutes or until golden and cooked through.
- Serve with a side of salad and a herby mayonnaise.
Note: if you’re unsure about seasoning, cook a small sample to taste and then adjust salt & pepper as needed
